Wild Game Recipe: Pan Roasted Duck with Corn Crepes and Sage, Sour Cherry Sauce

For this recipe, I use either muscovy duck, a brazilian breed which is known for its incredible flavor and lean profile, or wild-hunted duck. Other breeds, such as moulard or pekin, will do fine, but be aware that the principal difference among these types of duck is the fat cap underneath the skin. With any breed of duck, to cook it properly, you want to render the fat from under the skin of the breast at a cooking temperature and time that will allow the skin to brown perfectly, once all the excess fat is rendered away. For all breeds, lightly score the duck breast, skin side, so that the skin is pierced (freeing the fat to render away), without going into the flesh of the breast. To do this, you will need a sharp knife. Score the breast at 45 deg. angles, so you end up with a diamond pattern on the skin side of the breast.

What is your reaction to advertising? Well, do not tell me that it annoys or irritates you. I know that. The same goes for me. I'd like to know how you act after reading some advertising piece. For example, sometimes it makes me just rush to the nearest store and buy the advertised item. Sometimes the name of the product may linger in my mind for a long time despite my resistance and desire to stop thinking about it. Awful. Persuading texts emphasize the advantages of the product. Urging texts aim at making the customer memorize the name of the product so they repeat it for many times. Informational texts provide us with the information about the product, they are clear and short. Reminding texts are very brief.

Getting Crafty With Paper Office Stationery

You know how much damage the making of new paper costs our environment. However, there is hardly any substance that can replace the function of paper. Even high-tech computers are not able to eliminate the need for paper. But there is one thing we can do to lessen our use of paper in our own way. You can segregate white office paper from other office trash for recycling. But with a bit creativity and effort, you can turn recycled paper supplies to a profitable business.

Paper recycling is old news, but it seems to be an on-and-off venture for most people. Making recycled paper crafts into a business provides fuel to the recycling machine. If you look at bookstore displays, you'll find coarse looking stationery and specialty papers. Even if these look old and rough, they are more expensive than those smoother and printed papers. Those coarse specialty papers are handmade and use natural fibers and recycled paper. You don't need to buy a truckload of waste paper to get started. In fact, look around your house. Sort through your old files and see if there's anything in there that you don't need anymore. White office paper like bond papers are great for this recycling project.

After sorting the white papers from the rest of your office stationery supplies, shred them in a document shredder or just tear them to little pieces. Throw in colored paper if you like a bit of color and different textures. Place the shredded papers in a blender or food processor with hot water in batches. Blend for a couple of minutes until the mixture looks fine and in one color. Add food color or dye if desired. For a touch of ingenuity, a few drops of essential oils like lavender or rose water make for lightly scented papers.

The blended pulp will be the base for your homemade paper. But to form and harden it, you must have a screen and mold. These materials are available in paper supplies stores or made at home using wooden frames and fiberglass screen. Meanwhile, soak the pulp in batches in a soaking solution made of water and liquid starch. The starch will prevent the ink from softening the paper. The amount of pulp per batch depends on the desired paper thickness. More pulp means thicker paper. Stir amd make sure that the starch is well incorporated in the pulp. Scoop the paper out using the molds and tap it to drain excess water. Level the surface of the pulp until smooth. Do this repeatedly until the right thickness and texture is achieved. Cover the mold with a fabric and invert it, making the pulp slide onto the cloth. Squeeze the pulp to remove excess water and dry it out. Stack the prepared pulp together with fabric in between in each layer. Press excess water out and separate the individual sheets. The sheets can be air-dried or laid out in newspapers to dry by sunlight.

When dried, the handmade paper can be cut into desired sizes and bound by natural fibers like hemp rope to form a journal. When cut into tiny pieces, the sheets also make lovely note cards. To add a touch of elegance, dried flowers and leaves can be added during the molding process. The use of office paper is not limited to the office. With this project, you can start your own paper supplies business.

A photographer with a film budget amounting to thousands of dollars in one year may find digital camera more practical. But if you are not a busy photographer, your income may not defray the cost of going digital.

Change Your Tone - Media Coverage Shouldn't Be Toned By Software

The world of PR is benefiting from dramatic changes in the way media coverage is being delivered electronically to your computer desktop or PDA of choice. Perhaps the nuisance of ink on your fingers is being replaced by a bad case of "BlackBerry thumb" -- but nevertheless getting your media coverage electronically has never been easier or more mobile.

These changes now drive the development of new tools from content providers, and new software programs to help better manage and analyze media coverage. The automation occurring at the database level and through the real-time delivery of organizational news, to internal and external stakeholders, is now almost taken for granted. And the holy grail of PR -- to automate media analysis and measurement -- is already under way; but where should software stop to make way for human analysis?.

Media analysis programs can save countless hours quantifying and sorting media coverage in an unlimited number of ways, including by circulation, region, ad equivalency, company programs and services, and competitive brands. However, do you really want a computer program qualifying how each story affects your organization? It's a gamble with little upside.

Just Say No

The automation of tone and sentiment has already been incorporated into some software programs, but how accurate can it be? Every story, across every medium, will have a dramatically different meaning or impact for various organizations and their stakeholders. Behind the news emerge both winner and losers.

For instance, if a negative story breaks about a strike at one bottling plant it will be a boon for its competitors. The ability to determine which companies are negatively affected by the news is very limited. Furthermore, understanding the actual tone or possible ongoing bias of the reporter on an issue is impossible to automate. News is as much about delivering the facts, as it is provoking a reaction or emotion from the reader. Media analysis solutions can certainly help decipher the facts, but the rest should be left to a team of communications professionals.

Too Subjective?

The argument against toning media coverage has often been it is too subjective -- if the news can be interpreted differently by each individual, won't this skew the results in the end? True enough -- but this can easily be solved with the introduction of a tone standardized 'scorecard' that is consistently applied to each story.

These scorecards can really vary, depending on the type of analysis you want to deliver in the end. Many organizations will chose to tone stories by ranking them as positive, neutral or negative.

The use of these 3 words alone is where subjectivity problems can creep in. Along with team brainstorming and training sessions on how tone can be applied, one quick fix is to use the C.B.S. Scorecard instead:<
  1. Use Critical (in place of Negative.)
  2. Use Balanced (in place of Neutral)
  3. Use Supportive (in place Positive)


After reading an article, it is much easier to answer the question "Was that story critical, balanced, or supportive of our organization?" Instead of: "Was that story negative, neutral or positive?"

When it comes to tone it won't always be black or white, but I'd rather leave the grey zones to a trained communications professional rather than to the guesswork of a software application.
